WHere is a home-style take on a beverage from the seasonal cocktail list. It's a batch pre-mixed which is packed full of tastes of a festive period, rendering it ideal for your festive gathering. Reserve the remaining cordial you can use for breakfast cocktails, puddings, or to mix another batch of this cocktail.
The Bikini Cocktail
Serves 10 guests
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Syrup: Combine the listed ingredients inside a pot, bring to a simmer, mixing so the sugar melts. Next, take off the stove and let it to cool completely. Transfer into a clean bottle, cap it and store in the fridge, it can be stored for up to a month.
To make Batch Mix: Pour all the liquid ingredients into a big jug, leave to sit for an hour, then pass it through preferably using a fine cloth, to ensure it's perfectly clear.
To serve: Add 85ml of the cocktail base into your cocktail shaker packed with ice, and stir carefully for about 60 seconds until cold. Strain into an chilled martini glass or equivalent, decorate with the cranberries and complete it using a brief mist of mandarin oil above the glass.
